Indian dishes are on offer that reflect the whole country and its spices: "Chicken Madras, of course, but also fish dishes, for example, for which Goa is famous," says Sanjeev Kumar, who has fulfilled a dream with his restaurant. Many of the dishes are traditionally cooked in a clay oven.
